Y’all have probably noticed that I’m finally truly making some strides on a healthier lifestyle, and I’m actually serious about it. I’m feeling a lot better when I’m working out often, and I’m even trying to improve my diet (FOR REAL THIS TIME!). I still have a long way to go but I always love hearing from y’all when I need inspiration or ideas. And since part of my lack of healthy eating usually stems from boredom of meals, I thought I’d ask y’all for your opinion.
Team BTD GO-To Healthy Lunch Ideas
Since I asked the BTD community for their healthy lunch ideas, I wanted to pull together all the responses so everyone could see. Because I’m sure I’m not the only one who struggles here, right?! Here’s the list – and thanks for everyone who submitted – y’all are the best!
Avocado Toast
I was shocked to hear how fancy slash creative y’all get with avocado toast and LOVE it because I freaking love avo toast. It’s such a quick easy lunch, and by sprucing things up, you could literally eat it everyday. Here were the toppings y’all suggested
- Fried/boiled/soft boiled/poached eggs
- Everything but the Bagel seasoning from Trader Joe’s (SO good!)
- Trader Joe’s Chile/Lime Seasoning
- Tomatoes and mozzarella
- Red pepper flakes
- Arugula
- Red Onions
- Radishes
- Cucumbers
- Feta
- Chicken
Green salads with chicken
Basic, I know, but when you’re wanting to be healthy – it’s simple. Make things more fun with these toppings:
- Avocado
- Cheese (feta, cheddar, goat, cotija, etc)
- Kale
- Spinach
- All veggies, basically
- Pomegranate seeds, sunflower seeds
- Nuts
- Dried fruit
- Bell peppers
Chicken salad
Make it healthy topped over butter lettuce with either mayo or Greek yogurt!
Veggies with dips
This is such a Brighton lunch – I love a good snack turned lunch when you add some protein. I’ll add some whole wheat pita bread too.
- Guacamole
- Hummus
- Carrots
- Celery
- Bell peppers
- Cucumber
- Tzatziki sauce
Wraps
Yum! I want to start making more of these.
- Low carb tortillas or sandwich wraps
- Hummus or tzatziki sauce
- Red Onions
- Bell peppers
- Chicken salad
- Tuna or tuna salad
- Lettuce
Quinoa Bowls
Lots of people seemed to love these. Here are a couple good mixes!
- Chicken sausage, kale + feta
- Arugula + roasted sweet potato
- Black beans, feta, avocado +vinaigrette
Fruit
If you had a big breakfast or are planning a big dinner, mix fruit with something below:
- Cottage cheese
- Greek Yogurt
- Almond butter (specifically apples)
Ground turkey bowls
Love this idea and do it a lot myself. Here are 4 options that honestly all sound good.
- With tomatoes, corn, olives and Mrs. Dash Taco Seasoning Mix, avocado, brown rice or black beans
- With sautéed mushrooms & asparagus, over brown rice with avocado
- With sweet potatoes and veggies with TJ’s Lime Chile Seasoning
Peanut butter sandwich on whole wheat toast or English muffin
Smoothie
