Okay Y’all, so  a moment of transparency; I haven’t been cooking as much as I was in the beginning of quarantine and I miss it! With that being said, I found some new recipes that got me excited about picking up my spatula and getting back in the kitchen again and I hoping that sharing these will spark a little summer cooking with all of you.

I’m planning to make these recipes throughout the month of July and I would love you all to share them with me if you try them too. Some of you sent me your favorites via DM and I’ve included a few of those in this list too! I’m excited to get back into it.

Recipes I’m Excited to Try This Month

Creamy Lemon Chicken 

I found this on one of my favorite places for recipe inspiration, Gimme Delicious, and this one stood out to me because lemon always reminds me of summer. My grandma had a lemon tree growing up and some of my all time favorite memories was going to her house and making fresh lemonade – i love the taste!

Sriracha Shrimp Tacos 

I’ll be honest, when it comes to spicy foods I like to pace myself, but Duncan loves Sriracha and you can’t beat a fresh shrimp taco on a warm summer night, so I thought I would give another Gimme Delicious recipe a try! 

Hibachi Style Chicken with Magic Mustard Sauce 

I’ve actually made this one a few times – I think I found it over quarantine and it has quickly become one of our favorites! My mom and sister just came to town and we made it for dinner. I was reminded how much I love this The Defined Dish quick and simple meal. I can’t wait to have it again this month!

Pasta Alla Norma (with added chicken) 

YOU GUYS, I’m finally pulling the trigger and trying one of the Cravings by Chrissy Teigen recipes. Pasta is my go-to comfort food and I think this new twist on eggplant parmesan will be so satisfying. I’ll be adding chicken to mine for extra protein, but I think this could be a universal dish whether you add another kind of protein or keep it a vegetarian pasta.

Stuffed Mozzarella and Spinach Chicken Breast + Parmesan Zucchini Fries 

I have a feeling this one might become a staple in the Butler household. I’m sure you can see a trend with chicken being a fan favorite or mine, but what an fun way to spice up your chicken breast with this Eat Well 101 recipe. We recently purchased an air fryer so I could try new ways to cook sweet potatoes, but I saw these Easy Weeknight Recipes Zucchini Fries and knew I had to put these in there to try in July!

Pork Chop With Dijon Herb Sauce 

Anything paired with a Dijon Mustard is my jam! I’ll be honest, I don’t always turn to pork for my protein, but this recipe from Skinny Taste was shared with me by a girl on Instagram and I think it would be a yummy way to switch things up!

One Skillet Saucy Chicken Tortilla Enchilada Rice Bake

Doesn’t this look SO GOOD? I still don’t know how baseball or football season are looking with Covid-19, but this nacho dish from Half Baked Harvest would be the person one pan game-time-at-home-kind of dinner!

PF Chang’s Lettuce Chicken Wrap

These look so yummy! Some nights a lighter dinner is need and this recipe for the PF Chang’s Lettuce Chicken Wraps from Damn Delicious would be perfect!

One Pan Harissa Chicken 

As you can probably gather by now, chicken is a fan favorite in the Butler home. No matter what way we make it, I know it’s something we’ll most likely love and I don’t think this fresh recipe from David Lebovitz will be any different!

I’d be lying if I told you all that I’m a master chef in the kitchen, but there is something about finding a recipe you love, learning new skills, and having a satisfying meal to enjoy at the end of all the hard work.
